Take it from a person who has eaten more than 15,000 eggs in the last 20 years.
Sometimes the same routine is good and other times it can get boring. When you are trying to find healthy breakfast recipes you tend to gravitate to the same things over and over.
I love eggs and they have so many benefits which is why I eat them almost every single day.
When I need a change I find a healthy breakfast recipe like this to spice up my breakfast routine and those eggs I eat.

1/4 cup minced red onion
1 garlic clove, minced
1/3 cup diced red bell pepper
1/3 cup zucchini, diced
1 tsp Italian seasoning
3 Tbsp skim milk
3 Tbsp grated fresh cheese (your choice)
4-5 cherry tomatoes (sliced in half)
Coat 1 large ovenproof skillet with a non stick cooking spray. Then heat the skillet over medium heat. When hot add the onion to saute for about 3 minutes. Then add the garlic, bell pepper and zucchini to saute for another 3 minutes. Now add the Italian seasoning and if desired salt and pepper. Keep on stovetop, but turn off heat to keep warm, but not overcook.
Set the oven rack roughly 6 inches from the broiler and preheat the oven and set to broil. Separate the yolks from the egg whites. Beat the egg yolks with the skim milk. Add 2 Tbsp of grated cheese. Now beat the egg whites with a mixer until they are stiff. Fold the egg whites into the egg yolks.
Pour the egg mixture on top of the vegetables that are in the skillet and cook in medium heat for about 4 minutes or until the bottom starts to firm up. Then place the sliced cherry tomatoes and the remaining grated cheese on top of the frittata. Place the skillet in the oven and broil for 2 minutes or until lightly browned on top.
Remove and Serve!
