Roasted Lemon Chicken Salad

Salads don’t have to be boring.  You can eat healthy and still have tons of flavor in each bite.  

This recipe is a delicious low carb recipe that is quick to make.  

Full preparation time is only 20 minutes.  These are the types of meals that I like to make.  

This recipe makes 6 one cup servings or can be a main meal for two people if you’d like.  



3 2/3 cups cooked chicken  (can be cubed).  1 lb cooked chicken should make 3 2/3 cups cubed chicken
3/4 cup diced celery (2 celery sticks)
1 1/4 cup red bell pepper 
1 garlic bulb (minced or finely chopped)
4 Tbsp olive oil
1 3/4 Tbsp white balsamic vinegar
1 tsp Dijon Mustard
1/4 cup shallot (minced)
3 Tbsp chopped walnuts
Juice from 2 lemons
6 cups Greens (mixture of spinach, kale, lettuce)


Cook the chicken with the minced garlic bulb.  In a large bowl, combine the cooked chicken, celery, pepper, and shallot.   Whisk together in a separate bowl the olive oil, vinegar, lemon juice and mustard.  Add this dressing to the chicken and vegetables and mix well.  Then mix in the chopped walnuts and serve over the mixed greens.

2 Celery stalks
1 bulb of Garlic
2 Lemons
1 Red Bell Pepper
6 cups of mixed salad greens
1 shallot
1lb of cooked chicken (3 2/3 cups)
3 Tbsp chopped walnuts
Olive oil
White balsamic vinegar
