Old Fashioned Recipe

I am going to make an assumption that I feel is pretty accurate.  Most people if you are over 30 had this meal as one of their staples in their house.  There parents went to it as a trusted standby.  They could count on it to deliver a hearty meal and it was simple to make.  

Now those under 30 may not have had the luxury of eating this hearty meal like the rest of us.  Cultures changed, lifestyles changed and I am not sure if this is as popular as it once was.  

So I am going to bring it back.  I introduce to you the wonderful hearty Meatloaf.  🙂

Meat Loaf

1 cup no-salt tomato sauce
1lb lean ground beef
2 egg whites
1 zucchini, grated
1 rib celery, finely chopped
1/2 small yellow onion finely chopped
1/2 cup quick cooking oats
1/4 cup toasted wheat germ
2 Tbsp sliced black olives
1 tsp dried oregano
1/4 tsp ground black pepper

Directions:

Preheat the oven to 350 degrees F. Coat a nonstick 9” x 5” pan with cooking spray.  In a large bowl combine . cup of tomato sauce with the rest of the ingredients, and use your hands to mix everything together. Press the meat mixture evenly into the pan, and pour the rest of the tomato sauce on top. Bake for 50 minutes (internal temperature of 160 degrees F). Remove the meat loaf from the oven and let it sit in the pan for 10 minutes before serving.
