Low Carb Italian Beef Recipe

ItalianBeef2I love making this meal because it is so easy to make and I LOVE simple recipes.  There are a few ways you can enjoy this healthy Italian Beef Recipe.  For those who want simple recipes all you need to get started is a Crockpot.

Ingredients:

4lb Boneless Chuck Roast (rump roast)
Two 10 3/4 oz cans of chicken broth (or you can use 2 bouillon cubs in the equal amount of water)
1 tsp garlic powder
1 1/2 tsp oregano
1 1/2 tsp rosemary
1 tsp onion salt
1 diced green pepper (or I use one jar of Italian Mix Giardiniera, I also use some pepperchini peppers)
1 cube beef bouillon in 1/2 cup of water

Preparation:

Put all the ingredients into the crockpot.  If you want this for dinner go ahead and start this on low before you go to work and let it slow cook all day.  When you come home all you have to do is shred the beef and serve.

You can serve a few different ways.  I like it as a low carb recipe and will just take some of the beef, giardiniera mix and pepperchini pepper slices.  I then put a slice of provolone cheese on top.  Combine this along with some steamed vegetables and I have a delicious low carb meal.

Of course you can eat this as a French Dip type meal and put the beef mixture into a french roll and top with your favorite cheese.  Then use the Au Jous sauce for dipping.

Prep time:  10 minutes
Cook time:  9-11 hours on Low, 5-6 hours on High
