Low Carb Baked Egg Recipe

My wife discovered this recipe and it is a perfect Sunday morning breakfast when you want a little bit of a cheat meal.  

It is also perfect when you have to cook breakfast for a large group.  It is minimum fuss, doesn’t make a mess and can cook for an entire family all at once.  

I hope you enjoy it.  I know we did yesterday morning.  

This recipe is based off of 4 people, but you will see how easy it is to make more. 

Baked Eggs

4 slices baconBaked Eggs
4 tsp butter
4 Eggs
4 1 1/2 inch square slices of cheddar cheese


Preheat oven to 350 degrees F.  Lightly grease cups of a 6-cup muffin pan.  Cook bacon in a large skillet over medium heat, turning occasionally, until beginning to brown.  Bacon should still be flexible when you take it out and not crispy.  

Line the sides of each muffin cup with 1 slice of bacon.  Put 1tsp of butter into each cup.  Then crack an egg into each cup.  Bake until desired doneness.  It should take 10-15 minutes.  After baking top each egg with 1 slice of cheddar cheese.  You could also use shredded cheese here instead of a cheese slice.

Continue baking until cheese is melted for another 1-2 minutes.  Remove from the oven and let sit for 1 minute.  Then lift each one out with a spoon or small spatula and enjoy.
