Blueberry Bran Pancakes
1 cup Fiber One cereal
1 1/4 skim milk
2 Tbsp. Vegetable oil
1 cup Whole wheat flour
1 Tbsp. Sugar
1 tsp. Baking powder
1/2 tsp. Baking soda
1/2 tsp. Salt
1/2 cup fresh or frozen (thawed) blueberries
Crush cereal by placing in resealable food storage plastic bag. In medium bowl ,beat egg
with whisk or fork. Beat in milk, oil, and cereal; let stand until cereal is softened. Beat in
remaining ingredients except blueberries. Gently stir in 1/2 cup blueberries. Pour 1/4 cup of batter onto hot greased skillet/griddle. Cook until both sides are done.
