Almond Butter Satay Chicken Low Carb Recipe

almond_butter_satoychix2I made this recipe the other night and it has now become one of my favorites.  Normally I don’t like long prep time, but this one is simple.  It just has to marinate for a night.  

It couldn’t have been simpler to make and tasted amazing.  

It is called Almond Butter Satay Chicken and an excellent low carb recipe to add to your healthy eating plans.

Almond Butter Satay Chicken

2 Chicken Breasts sliced almond_butter_satoychix1
1/4 cup creamy almond butter
3 Tablespoons Tamari
2 Tablespoons raw hone or agave
1 lime, juiced and zested
1/2 tsp red pepper flakes

Directions:

Place sliced chicken in a 9 x 13″ baking dish.  In a small bowl, microwave almond butter, tamari, raw honey, lime juice and zest, and red pepper flakes for 60 seconds.  Whisk until creamy and well mixed.  Pour mixture over chicken, stirring to coat.  Marinate overnight. 

Grill until cooked through, about 4-6 minutes.  Serve and enjoy!
