What A Busy Mom Eats Every Day

This daily routine is from my friend Cassandra Forsythe.  Cassandra as you will see is very busy and here is what she generally eats on a daily basis.  

Take notice of the simple quick meals she prepares to fit her busy schedule.  

Cassandra has a energetic toddler that gets into everything imaginable and of course wants lots of attention.  As Cassandra puts it “it’s hard enough to find time to shower, let alone eat well some days”.  Cassandra is also a Registered Dietitian like myself and owns her own bootcamp business.  The word “Busy” is a common word in her life. 

Cassandra states “I do make an effort to eat very well 90% of the time.”

Here is what a typical day looks like for Cassandra on a very busy day.  On her less active days her food intake is lower.  

She wakes up at 4am to teach her first bootcamp class that starts at 5:15am and classes end at 7:15am. 

Pre-workout/Before Teaching   4:45am:

Protein shake with 1 scoop of protein powder along with 1 Tbsp ground flaxseed.  Mixed with water.

Post workout 7:30am:

Post workout recovery shake.  She consumes 1 scoop of Prograde Workoutegg

8:30 am Breakfast: 

Two Omega-3 Eggs with 1 cup Egg Whites and Spinach
1 Whole Grapefruit
Supplements:  VGF25+ For Women, EFA Icon

10:30am Morning Snack: 

Handful of Nuts
Sliced Cucumber

12:00pm Lunch:

Eat a Large Salad that includes Baby Spinach, Olives, Beets, Shredded Carrots, Cucumbers, and Tomatoes.   She also includes 1 can of Mussels and 1 can of Sardines (packed in water).  She tops this with Olive Oil and Balsamic Vinegar.

2pm Mid-Day Snack: 

Protein packed smoothie made with these ingredients:  2 scoops Protein Powder, Frozen Berries (Fresh if in season), Spinach, Flax Oil and Cashews.

4:30 Mid-Day Snack (2nd snack of afternoon or early dinner for Cassandra):

Cooked Turkey made with Salsa
Green Beans

Teaches another bootcamp class from 5:30pm to 6:30pm. 

8pm Dinner: 

roasted_vegetables_smHer choice of Turkey, Pork or Fish (large helping)
Large serving of Asparagus or another vegetable
Tossed Salad with Olive oil or Balsamic Dressing

Goes to bed around 9:30 or 10pm. 

As you can see she has a very busy life like most of us do, but with some strategic planning she finds plenty of quick, easy snacks and meals to provide the proper nutrients and calories throughout the day.  

On days where maybe she doesn’t have to teach the early morning bootcamp classes or the evening class she would remove one of those snacks in the afternoon or re-arrange when she eats and the amount of calories she consumes for that less active day.

Don’t use the word “Busy” as an excuse.  Use it as a tool to map out your healthy eating plans and you will find that you will still have your busy lifestyle (unfortunately), but you will also have a sold healthy meal plan to ensure you hit your goals.
