Mouth Watering Mini Meat Loaves

Meat loaf is a very recipe of many and it is also made many different ways.  Many times the recipe comes from an old family recipe or grandparent who has been making the same recipe for 40 years.  So I am not here to say your grandmother’s meat loaf is not good.

I am here to say that this recipe below is delicous and very healthy for you.  So you should give it a try and see if you feel the same way as I do. It also is a new twist on conventional meat loaf in a meal loaf pan.  This is a fun way to introduce new foods to children also if you are looking for new ways to introduce food.
Nonstick cooking spray

1 lb. ground turkey breast

¾ cup rolled oats

½ cup mild red salsa
 ¼ cup snipped fresh cilantro
2 egg whites
2 tsp chilli powder
1 ½ tsp ground cumin

¾ cup mild chunky salsa
½ cup low fat cheddar cheese
Heat your oven to 400 degrees. Then lightly spray a 12 cup muffin pan with nonstick cooking spray.  In large bowl combine your turkey, oats, red salsa, cilantro, egg whites, chili powder, and cumin. Once everything is mixed together divide the mixture into the muffin cups. Bake this for 20 minutes or until no longer pink.
Top each mini meat loaf with 1 tablespoon chunky salsa and 2 teaspoons cheese and enjoy!
