[Healthy Recipe] Apple Oat Bran Muffins

I have a change of pace today and something that will refill your leptin levels.  You can add this as a side item to your breakfast or even have it as a snack during the day as long as you don’t eat 3 of them. 

Kids will also love them and give them something healthier to eat besides junk food or chips.  Enjoy this light and refreshing snack item. 

Apple Oat-Bran Muffins

1 cup Gala apples or an apple of your choicebran muffins
2 cups whole wheat pastry flour
1 cup all purpose flour
1 1/2 cups oat bran
2 1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp nutmeg
1 12-ounce can apple juice concentrate (thawed)
1 cup water


Heat oven to 325° F. Lightly oil muffin pan. Peel and core apples; chop them coarsely. Set aside. In a mixing bowl, stir together pastry flour, flour, oat bran, baking soda, cinnamon, and nutmeg. Add thawed apple-juice concentrate, chopped apples, and enough water to make a light batter. Mix just enough to moisten all ingredients.  Divide batter among the muffin cups and bake till lightly browned, 25-30 minutes.    Remove muffins from cups while hot and enjoy with a side of fresh fruit and a glass of milk.
